&lt;b&gt;Erin&lt;/b&gt; I don&#039;t think it&#039;s too bad in the artery clogging area.  Maybe 1/2 cup of cream, and a tablespoon of roux, which would be divided into two portions.  Olive oil for the plantain and grouper, which is now thought to have some good qualities.  Omega-3 in the fish, which probably reverses the damage done from the cream and roux.    Lots of fruit and herbs....  Don&#039;t I rationalize well?</description>
