YUM!! And the beautiful pictures make me want to get cooking right now!
Only thing I don't get is why go through all the trouble to poach the chicken and shred it, when you could just let it happen naturally in the pot? I like to chop a half chicken in big chunks and throw it in, bones and everything. After 90 min, the chicken falls of the bone and "shreds" almost by itself, plus you get that little bit of extra flavor!
Thanks! I'll be looking for more posts from you!

Kevin, Cindy -- Thanks! Not hard to make, just a little patience with the roux!

Varsha -- Thanks! I like seeing the techniques of a recipe...what each step looks like, so I know I'm doing it right. So, we try to do the same!

Jenn -- Try! The roux takes some attention, but the rest is just a fun stew, and can be as original as you can be!

PG -- How did it turn out? I do love okra, and one day, I'll do a side-by-side and see which is better. I just learned the file method, and I keep doing it.

I've been surfing all morning for a gumbo recipe that I liked and that didn't require a trip to the supermarket. This is definately what I was looking for! *two thumbs up*. I will making this for dinner tonight...[with okra], which my son loves.
thanx

Mrs E I think that's what so rustic about it -- just using what's on hand. Good stuff!

Ninette -- Thanks!

Joe -- Thanks, Joe!

Melissa -- I cook with Essence a lot, but I cut out most of the salt from his recipe. Essence is really more of a condiment than an ingredient, but if the salt is low, it works as both. I like the proportions of his spices.

Ben Yeah, I've used Italian when I couldn't find andouille. Always cool to hear it worked out!
